Chicken Biriyani




INGREDIENTS :


Basmati raw rice - 2 Cups
Green chillies - 5 to 7
Oil - 2 tbsp
Ghee - 1 tbsp
Spices for tempering (little of all) - Jeera, Fennel seeds,Bay leaves,Cardomom(1 piece),anasi mokku
Onion - 1 big thinly sliced
Tomato - 1 small
Ginger garlic paste - 1 tspn
Plain Red chilli powder - 1 small tspn
Salt - as per taste
Milk - 1 glass
Chicken - 1 lb

PREPARATION:

1.Add oil and ghee in the pressure cooker and do tempering of all spices.
2.Next add green chillies and onions to it.
3.Add the ginger garlic paste fresh now.Saute till the onions become transparent.
4.Now add chicken pieces to it and stir till they turn white and half boiled,and add a pinch of turmeric powder now,
5. Add the small tspn of chilli powder and 2 spoons of salt + 1 spoon for rice (totally 3 salt for 2 cups rice), adjust based on salt taste to the chicken now.
6.Finally add tomato to this and stir them well.
7.Now pressure cook the chicken in medium heat for either 1 whistle or compulsory 10 minutes in low flame.
8.Note that we have not added water to this till now.
9.Remove the pressure and check for water.
10.There should be water to a certain amount in it. Measure for it.
11.Now add water on 1:1.5 ratio for rice and water. If it is 2 glass rice,then it should be 3 glass water and milk.i.e add 1 glass of milk (I use whole milk) and 2 glass of water to make it 3.
12.Now let the liquid with chicken rise to a boil,and then add the rice now.
13.Keep dum over it for cooking ,it takes complete 10 to 15 minutes to cook and get the flavour.
14.Add cut coriander or mint leaves to teh boiling water before adding rice or add it after makign the biriyani.
15.Enjoy the biriyani,ready to eat now~
