Tofu Deep Fry & Spicy Peanut Sauce



INGREDIENTS :

Tofu - 1 packet
Canola oil - To deep fry tofu

For the sauce :

Dry Roasted Peanuts - A handful
Soy sauce ,Chilli sauce - as per taste
Brown sugar 2 teaspoon
salt - 1 tsp
Honey - 1 teaspoon
Ginger - 1/2 inch cut into pieces
Chilli flakes - to taste
Lime Juice - to taste

PREPARATION :


1. Before frying tofu,at least 20 minutes before you start frying, lay out a thick layer of newspaper. place a paper towel over the newspaper.
2. Take out the tofu ,cut it into bitesize cubes and arrange them over the papertowel now.
Lining up the tofu pieces on newspaper will absorb moisture from the tofu (and the paper towel will keep off the newsprint from getting onto the tofu) .
3.Put another paper towel over the tofu pieces and gently press them to absorb excess moisture.
3.Now heat canola oil in a large pan,and in medium heat start frying the tofu.
4. Fry until the tofu is golden on both sides. Take them out and they are ready to eat with the spicy peanut sauce :)

Peanut Sauce :

1. Blend peanuts and ginger and keep it aside.
2. Heat a small saucepan and add the soy sauce,chilli sauce and the grind peanut ginger mixture.Also add the other ingredients for sauce and stir for 2 to 3 minutes until warm. U can add more chilli flakes for spicyness.
3. The sauce is ready to dip tofu in it :)

Chicken Tandoori



INGREDIENTS:
Chicken Drumsticks - 4 to 5 pieces

To Marinate :

Chilli powder - 2 teaspoons
Curd - 1/2 cup
Garam masala - 2 pinches
Chilli chicken masala - 2 teaspoons (optional)
Salt - to taste
Paprika - 1 teaspoon
Ginger garlic paste - 1 teaspoon
Lemon Juice - 1 teaspoon
Vegetable oil - For brushing or spraying
Pepper - 1/4 teaspoon

Onion ,tomato , bell peppers - For garnishing ,can be baked too.

PREPARATION :

1.Make few slits or cut in the chicken drumstick pieces so that the marination penetrates into the flesh too.
2.Mix all ingredients in a bowl except oil and make a mixture of it.
3.Now put the chicken pieces into the mixture,mix well ,coat it evenly and allow it to marinate overnight or atleast 8 hours.
4. Now to cook the chicken,preheat the oven to 400 degrees.
5. Place the chicken upside on the rack and brush it with little oil and bake it uncovered for 40 to 50 minutes.

I generally marinate the onion,tomato and bell peppers ,zuchini along with chicken(at the time of cooking only) and bake them and garnish them over the tandoori chicken.

Fried Chicken (Like KFC)


INGREDIENTS :


Chicken Drumsticks - 4 to 5 pieces
Butter or Margarine - 1/4 cup
Cornflakes - 2 cups
Salt - to taste
Pepper - 1/4 teaspoon
Paprika or chilli powder - 1 teaspoon
Milk - 1/2 cup

PREPARATION :

1.Heat conventional oven to 400 degrees.
2.Melt butter or margarine in a pan ,add to it the milk, salt and parika and pepper.
3.Crush the cornflakes in a blender to fine crumbs.
4.Now dip the chicken into the milk -margarine mixture and then coat it evenly with the cornflakes mixture.
5.Place the chicken upside in pan.
6.Bake it uncovered for 35 to 45 minutes or until when the chicken is fully boiled.

Enjoy the fried chicken and it is a instant dish which needs no marination of chicken.

P.S - The indian style of making this involves flour mixture and bread crumbs ,which i ll post on the blog soon!

Chicken Samosa


INGREDIENTS :

For the Filling :

Chicken Breast - 1 LB
Onion - 1
Green chillies - 4
Ginger Garlic paste - a teaspoon full
Salt - to taste
Garam masala - 1/2 teaspoon
Chilli powder ,Coriander powder - 1 teaspoon
Mango powder - 1 teaspoon
Fennel seeds(optional) - 1/2 teaspoon

For the Pastry :

All purpose flour - 1 cup
Wheat flour - 2 tablespoon
Salt - to taste
Cooking Veg oil - 2 teaspoon

PREPARATION :

Make the dough just like how you make for chapathis and set it aside for 20 minutes.

Now for the filling , Initially i minced the chicken using blender and got ground chicken ready to cook. Take oil in a pan, saute green chillies slit and onion until they become transparent. Now add Minced chicken to it. Now add all spices to it and add little water and allow chicken to cook for 10 to 15 minutes either with lid closed or open. Let it cool down for the stuffing inside samosas!
U can also make a glue paste for sticking edges of samosa jus by mixing a spoonful maida with water.

Making of outer part :

1. Knead the pastry dough again and divide it into balls.
2. Roll this ball just like you make for a chapathi /roti.
3. Cut it into half with a knife.
4.Again cut the half into 2 making 4 pieces of the roti made.
5. Pick up one half and form a cone making with the edges overlapping and the triangular cone corner on top so that you can fill it with the chicken filling.
6. Glue this together with a little maida paste
7. Now the samosa is ready to be put in the oil and fried.


Enjoy the hot samosas with tomato ketchup or with sweet sauces.
