Badusha





INGREDIENTS :


All purpose flour - 2 Cups
vanaspathi or dalda or ghee - 2 tablespoon
sugar - 2 Cups
water - to cover sugar and make syrup
Baking soda - a Pinch
Baking Powder - 1 teaspoons
Fresh Curd - 1 Cup
Oil - To fry the doughnuts.

PREPARATION :

1.Mix Maida, baking powder,baking soda ,ghee and curd all together. Crumble them up into a dough and keep it aside for 20 minutes.
2.Take sugar in a heavy bottomed pan ,add water to cover the sugar and boil it on low flame. Wait for 8 to 10 minutes for single thread consistency.
3.Now after 20 minutes take the maida dough ,and make a ball of lemon size.
4. Flatten into cirlce shapes and fry it in Oil till they turn golden brown in colour.
5.Now add them into the sugar syrup. Turn sides so they get dipped into the syrup completely and take it out after 2 minutes each badusha.



6.Let them get dried before they go into a air tight container :)

Enjoy the crispy outer and inside fluffy badushas!

P.S : U can squeeze lemon juice into the sugar syrup while making it to avoid solidfying of sugar in the badusha.

Home made Pizza




INGREDIENTS :

Pizza Flour Mix (or All Purpose Flour ) - 1 Packet
Pizza Sauce - as per taste
Mozarella Cheese -- as per taste

Toppings :

Onion ,Tomato,Mushrooms,Olives,Jalapenos,Bell Peppers(U can add chicken pieces if u desire)

PREPARATION :

1.Preheat the oven to 375 degrees.
2. Mix the flour using luke warm water as u would do for making rotis.
3. Use the Rolling pin to make the dough as a big pizza base.Could be thin or thick as we prefer.
4. Now put on the pizza sauce over the pizza base.
5. Now add all the toppings as per taste and amount as we need.
6.Finally add the cheese over the toppings.
7.Now place it on the tray or a foil and bake it on the conventional oven.
8.The pizza is ready when the base turns golden brown and the cheese ,melts and a nice pizzatic aroma comes :)

Enjoy the Pizza...

P.S : U can also use american cheese instead of Mozarella.. My pizza looks yellowish because of the cheese.

Oatmeal raisin Cookies


INGREDIENTS :

1 1/4 cups all-purpose flour
3/4 cup butter, softened
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon ground cinnamon powder
1/2 teaspoon salt
1 cup raisins
2 cups rolled Oats

PREPARATION :

1. Preheat the oven to 375 degrees.
2. In a large bowl, mix together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla extract until fluffy.
3. Stir together flour, baking soda, cinnamon, and salt.
4. Now add this mixture into butter mixture and finally Stir in oats and raisins.
5. Drop by using a teaspoon onto the cookie sheets.
6. Bake 8-9 minutes for chewy cookies or 10-11 minutes for crunchy cookies.
7 . Cool them completely and transfer to air tight container to enjoy!

Tomato Bisque


INGREDIENTS :

Heavy Whipping Cream- 1 small packet
Tomato Sauce/Puree- 2 medium cans
Onions- 2 large (finely diced)
Garlic- 5-6 pods (finely diced)
Summer Vegetables: Zucchini, Mushroom,Yellow Squash, Carrots, Bell Peppers (Red, Yellow,
Orange)
Italian Seasoning

PREPARATION:

1.Take olive oil in a pan.Sauté garlic and onions.
2. Once they are translucent, add the vegetables. Add enough water for the vegetables to cook. You may also add chicken stock instead of water for additional flavor.3. Add salt, pepper, and Italian seasoning. Cover and cook for about 7-10 minutes, till the vegetables are done.4. Now add the cans of tomato sauce, add more Italian seasoning, little chilly powder.
5. Cook for another 7-10 minutes. Add water if its too thick. Then add the cream. Simmer for 4 minutes.

It tastes delicious when served with toasted bread~

Boondi Laddu



INGREDIENTS :

Gram Flour - 1 Cup
Sugar -1 1/2 cup
Oil - To fry
Cardomom - 5 pods
Cashews and Raisins - Desired


PREPARATION:

1 . Put the sugar and water in a pan ,boil it to make the sugar syrup.
2 . Meanwhile make the gram flour batter to make the boondis. It should be thicker than dosa batter and should be free of lumps.
3 . You can use the Skimmer /jalli karandi to make boondis.
4 . Heat the oil in the pan and now hold the skimmer few inches above the oil pan.
5 . Now pour the gram flour batter over the skimmer and the batter now drops in small round shapes into the oil,gets fried and becomes gold fried boondis.
6 . Now take the boondis out of the oil and put them into the sugar syrup directly.
7. Repeat the same process of making boondis with rest of the batter.
8. Once done with all the batter , the boondis in the syrup can now be smashed a bit and warmed now.
9. Add cardomom powder ,and fried cashews and raisins into the boondis.
10. Dont let the boondis to cool, instead when they are warm enough to handle,you can roll the boondis together and form Laddus of desired size.
11. Once the laddus becomes cool,they will become firm and in perfect shape.

The first time i made Laddu.. I wasnt able to make them into round shape/laddus... but still we enjoyed eating them as " Sweet Boondis"

I also made a part of Boondis mixed with chilli powder and salt rather than putting them in the sugar syrup...making "Kaara Boondis"

Finally to conclude .. this boondi making can result in any of the three snacks! Enjoy!

Custard Fruit Trifle


INGREDIENTS :

To make Custard :

Custard powder - 1 pack
Milk - 1 Cup
Egg - 1

To make the Trifle :

Custard - 1 Cup
Jello Jelly - 2 Cups
Apple - 1
Banana - 1
Muffin - 2
Mixed jam - 1 tsp
Raisins - to spread in the bowl of trifle
Cashews - for garnishing


PREPARATION :

1. The Custard can be prepared by adding milk and beaten egg to the powder and heating on low flame,stirring as per the pack instructions.
2.Cut the apple,banana into slices.
3. Muffin can also be cut into small pieces jus like muffin crumbs.
4. The trifle bowl has to be given a inline coating with mixed fruit jam(or any flavoured ) to add to taste.
5. Fill in the bowl with a thin layer of Custard.
6.Now fill in a layer of Jello jelly (Readymade or homemade) of any colour.
7. Sprinkle raisins over this layer and then fill it with a fruit mix (apple and banana) layer.
8. Same can be continued over again a layer of custard,jelly,fruits and garnish with cashews on top.
9. A scoop of Vanilla Ice cream over these coatings will make the trifle even more delicious.

I made this trifle for the first time 2 months back..and it was real yummy.Thanks to my sister who used to make it often and its now a favourite dish of ours:) My 2 and half years old son loves this so much..

Mysore Pak

INGREDIENTS :

Gram Flour - 1 Cup
Sugar - 2 Cups
Ghee - 2 Cups


PREPARATION :

1.Gram flour should be seived to avoid lumps during the preparation.
2. First make the sugar syrup ,out of 2 cups of sugar. The water must be a little above the sugar level to attain the exact consistency of the syrup to be made.
3.keep the Ghee ready. You can also make ghee by melting the unsalted butter or can use the readymade one.
4. once the syrup is ready ,add gram flour using a spoon little by little into it ,and meanwhile keep stirring it so that lumps are not formed.
5.When the mixture boils,add little ghee and keep stirring.
6. The gram flour and the ghee should be added alternatively as and wen u find the ghee being absorbed by the flour.
7.After adding all the flour and ghee ,keep the stove in medium flame and continue stirring the mixture until it thickens and u get to see porous consistency of the mixture.
8. Below is the picture of the exact consistency of mysore pak where you could transfer it to a greased pan.


8. You can tranfer the contents to a greased pan and allow the mixture to solidify.
9.Then after few minutes you can cut it into desired shapes .

Mysore pak i made for the first time was delicious..melts in mouth jus like Sri krishna Sweets Mysore pa:)

Home made Indian cheese - Paneer


INGREDIENTS :

Milk - 1 Gallon
Lemon - 1/4 Cup

PREPARATION :

1. Boil the milk on a medium flame in a heavy bottomed pan,stirring occassionally.
2. When the milk is fully boiled ,pour the squeezed lemon gradually into the pan of boiling milk and stir gently.
3.Now ,the milk curdles and seperates the water from it.
4.Once it gets completely curdled,Use a clean muslin/cotton cloth to drain the water from it.
5.The curdled milk in the cloth can be hung up for few minutes or you can show it in running water to cool it down and squeeze well to drain down water completely from it.
6.U can keep the wrapped paneer under a heavy pan for a while.
7.Now you can refrigerate the contents and then make it into slices of Paneer.

This Paneer can be used to make desserts(Rasgullas) or dishes like Paneer butter masala.

My First Recipe on Blog - Bengali Rasagulla




Hi everybody..here is my first post on recipes..and let me kick start it with a Sweet!

Bengali Rasagullas!!!

INGREDIENTS :


For the Cheese Balls :

Milk - 1 Gallon
Lemon - 1/4 Cup
(or)
Home made Paneer - 2 cups


For the Sugar Syrup:

Sugar - 1 cup
Water - 2 and half cups
Cardomom Powder - 1 tsp


PREPARATION:

To make the cheese balls :

7.These Paneer are basically rolled into balls for making of rasgullas.
8.Take a small amount of paneer in your palm and rub it with fingers to smoothen it for a while and it can be rolled into small balls.Paneer balls should be small in size as they would get bigger on boiling.

5. Take 2 cups of sugar and boil it in 3 cups of water for making the sugar syrup.
6. When it starts boiling,add the paneer balls into it. Fill the pan in such a way it accomodates the balls as it doubles once cooked full.
7. It can also be pressure cooked for 1 whistle or close the lid and cook for 10 minutes in a normal pan.Add Cardomom powder now.
8. Now open the lid ,and rasagullas floating in sugar syrup are ready to eat !
The rasgullas should be a little spongy and it is perfect when served chill..
