My First Recipe on Blog - Bengali Rasagulla




Hi everybody..here is my first post on recipes..and let me kick start it with a Sweet!

Bengali Rasagullas!!!

INGREDIENTS :


For the Cheese Balls :

Milk - 1 Gallon
Lemon - 1/4 Cup
(or)
Home made Paneer - 2 cups


For the Sugar Syrup:

Sugar - 1 cup
Water - 2 and half cups
Cardomom Powder - 1 tsp


PREPARATION:

To make the cheese balls :
1. Boil the milk on a medium flame in a heavy bottomed pan,stirring occassionally.
2. When the milk is fully boiled ,pour the squeezed lemon gradually into the pan of boiling milk and stir gently.
3.Now ,the milk curdles and seperates the water from it.
4.Once it gets completely curdled,Use a clean muslin/cotton cloth to drain the water from it.
5.The curdled milk in the cloth can be hung up for few minutes or you can show it in running water to cool it down and squeeze well to drain down water completely from it.
6.U can keep the wrapped paneer under a heavy pan for a while.
7.These Paneer are basically rolled into balls for making of rasgullas.
8.Take a small amount of paneer in your palm and rub it with fingers to smoothen it for a while and it can be rolled into small balls.Paneer balls should be small in size as they would get bigger on boiling.

5. Take 2 cups of sugar and boil it in 3 cups of water for making the sugar syrup.
6. When it starts boiling,add the paneer balls into it. Fill the pan in such a way it accomodates the balls as it doubles once cooked full.
7. It can also be pressure cooked for 1 whistle or close the lid and cook for 10 minutes in a normal pan.Add Cardomom powder now.
8. Now open the lid ,and rasagullas floating in sugar syrup are ready to eat !
The rasgullas should be a little spongy and it is perfect when served chill..
